RS Night Meeting 6/7/2012

To begin the meeting, we took a few moments to welcome our graduating Seniors into Relief Society. Melissa shared a cute poem while Allyson’s  mom handed her items mentioned in the poem. They were all things she would need for Relief Society:

When you decide to join us, we'll be glad to welcome you,

into our WORLDWIDE SISTERHOOD and to a group that's  new.
So here's a little something to help you on your way,
as you head off for Relief Society and to a brand new day.
You'll need a lesson manual with precious truths inside,
The lessons strengthen testimonies as they are taught worldwide.
Now when you find the meeting great and not a bit absurd,
Just use the pad and pencil to write down every word.
The tissues are for wiping tears when lessons touch your heart,
and we know you will love them all, right from the very start!
Here's a bookmark for your scriptures, please take them every week,
we'll study them together, as guidance we will seek.
You'll benefit if you will "CHEWS" to mingle with your sisters,
by attending Enrichment meetings, you'll gain more than hot glue gun blisters.
And last, an invitation in which every word rings true,
Cause you should know that Relief Society has a special place for YOU!

We welcome Allyson B., Carly G., and Hannah G. to our Relief Society!
The night started with a Tortilla making class taught by Alina D.. All were captivated by her mad tortilla making skills.

Here is her recipe: 

Flour Tortillas

4 c. flour
6 T. shortening
1/2 tsp. salt
1-1 1/2 c. water

Mix flour and salt, cut in shortening. Gradually add water until dough cleans sides of bowl. It shouldn't be too sticky.

Knead the dough well. Divide in 16-18 balls, kneading each ball thoroughly.

Cover with a clean towel and let it rest for 30 minutes.

Heat a skillet or griddle (electric skillets work really well)

To shape the tortillas, flatten on a very lightly floured surface and roll with rolling pin into a very thin circle. They will become thicker and more chewy when they cook.

Very carefully lift the tortilla and cook for 1-2 minutes per a side only. Flatten with a spatula if desired.
Aleesha L. also shared a few tips about tortilla making. She uses this product, “Masa”, which you can find on the flour aisle at the store. It’s a special corn flour. When she and her husband (from Mexico) make tortillas, they use this and add flour. (2 to 1 ratio; 2 parts Masa/1 part flour) She said it makes a fluffier corn tortilla. When you use this product, all you have to do is add the designated amount of water and you are good to go.

She also said that when purchasing a tortilla press…the heavier the better.

    

Others suggested using a rolling pin or even your cooking spray can.
We then enjoyed a fun haircutting class taught by Nicole I, with sweet James and Hailee as her “models”.

We ended the night with a beautiful message shared by Lori G. on “Inner Beauty”.

She shared an inspiring message on the importance of developing our inner beauty and letting our light shine.

She used the analogy of the difference between coal and a diamond. “A diamond is merely a lump of coal that did well under pressure.”

She handed out this beautiful Nelson Mandela quote:

Several people requested the recipe for the Ice Cream Dessert made by Aleesha. Here you go!
What you need:
13x9 pan
1 package Oreos
1/3 cup melted margarine
1/2 gallon softened vanilla ice cream
1 small bag of peppermint candies (about 20-30 candies or you can you candy canes)
1 tsp. peppermint extract (optional-I think the candy creates enough flavor)
Chocolate syrup
12 oz. cool whip

Stage one:
Crush Oreos. Stir in melted margarine, and press in the bottom of a 13x9 pan. Freeze.

Stage two:
Put softened ice cream in a bowl. Crush peppermint candy (I like to blend it in the blender) and stir it into the ice cream. Leave a little bit of crushed peppermint to sprinkle on top at the end. If desired add the peppermint extract.
Mix, and spread over Oreo layer. Freeze.

Stage three:
Spread chocolate syrup over the frozen ice cream layer. Freeze.

Stage four:
Top with cool whip. If desired, sprinkle with remaining crushed peppermint. Freeze.

Stage five:
Eat it! Yummyyyyy :)
